Ingredients
2 large baking apples, washed, cored and scored around
the middle
25g/1oz sugar
2.5ml/½tsp cinnamon
whipped cream or ice cream to serve
Method
1. Preheat the oven to 225C/425F/Gas 7.
2. Pour a little water into an ovenproof dish and add the
apples.
3. Mix the sugar and cinnamon. Put some of the mixture
into the holes of the apples and sprinkle the rest over
the top of the apples.
4. Bake in the oven for about 20-25 minutes, or on full
power in a microwave for 3-4 minutes, until they are
soft.
5. Serve hot with whipped cream or ice cream.

Ingredients
50g/2oz butter, softened, plus knob for cooking
8 ready made pancakes/crêpes
½ orange, juice and grated rind
½ lemon, juice and grated rind
15ml/1tbsp marmalade
Method
1. Butter pancakes and fold in half, then half again, to
form a triangle.
2. Melt knob of butter in a large frying pan, add orange
juice and rind, lemon juice and rind and marmalade.
3. When warm, add pancakes and heat gently for 3 minutes.
Note: Flambé the pancakes with brandy or cointreau, if
liked.
