Crafty Crepe Suzette

Ingredients
50g/2oz butter, softened, plus knob for cooking
8 ready made pancakes/crêpes
½ orange, juice and grated rind
½ lemon, juice and grated rind
15ml/1tbsp marmalade
Method
  1. Butter pancakes and fold in half, then half again, to form a triangle.
  2. Melt knob of butter in a large frying pan, add orange juice and rind, lemon juice and rind and marmalade.
  3. When warm, add pancakes and heat gently for 3 minutes.

Note: Flambé the pancakes with brandy or cointreau, if liked.
